A .ie address tells visitors you are an Irish business serving an Irish market. For local customers that is a trust signal. People searching for a plumber in Cork or a cafe in Galway tend to feel more comfortable with a local extension, and it can help you stand apart from larger overseas brands on .com.
The .ie namespace is managed by the .IE registry. Since the rules were liberalised in 2018 you no longer have to justify your claim to a specific name, but you do still need to show a real connection to Ireland, such as an Irish address or a registered Irish company. Have proof of that connection ready when you register.
A .com reads as international and category leading. If you sell beyond Ireland, or you are building a brand that is not tied to one country, .com is the safer long term choice. The downside is availability. Most short .com names are long gone, so you may end up with a compromise.
